I'm a true oatmeal cookie monster... I just counted, and as of January 2018, I've shared 47 oatmeal cookie recipes with you. Eep! Have you tried any of them yet? (? You can locate all my oatmeal cookie recipes directly there!) They're some of the most popular recipes in my site cause they taste really sweet and cozy, exactly like conventional"indulgent" oatmeal cookie recipes, but they contain no refined flour or sugar!
That means you'll begin with whole wheat bread (or fermented, if you would like ) and prompt oats (such as these... or those for a gluten free edition!) . Immediate oats are smaller and thinner than conventional rolled oats, also you are able to find them at canisters right next to those old-fashioned oats in the grocery store.
I probably seem like a broken record by now... But cause I ? you and need your cookies to flip out perfectly plump and soft, I'm reminding you again... Quantify your flour and oats correctly, applying this technique or a kitchen scale! (? That is the one I own and enjoy. It only cost $20!) A lot of either ingredient is likely to make your biscuits taste cakey or dry, as opposed to chewy. This is especially true of this oats--they behave like little sponges and soak up plenty of moisture out of your cookie dough!
Ripe bananas- ideal for baking! Really like all of @amybakeshealthy's yummy & healthful banana recipes!
See these bananas? And all those brown spots? When it comes to baking bananas, brown = beautiful! I ? extra speckly bananas cause they have a lot bright, bold flavor--along with extra natural sweetness! That's the minimum quantity of brown that I recommend. More is better!
The remaining part of the cookie dough's sweetness comes from another organic ingredient... Pure maple syrup (like this!) . You desire the type that comes directly from maple trees, which is typically offered in thin glass jars or squat, round plastic jugs. Forget the pancake sugar and sugar-free syrup!

The raisins add even more natural sweetness! The recently purchased, additional plump, perfectly soft ones are ideal... But if you have older, slightly dried out carbohydrates (hmm... it seems absurd to explain dried fruit as dried outside! ) , that is fine!
Just add them into a microwave-safe bowl, and pour water on top until they're completely covered. Seal plastic wrap over the top, and microwave the bowl on high for 1 minute. If you allow the raisins sit while mixing together the cookie dough, this little trick hydrates them so they're exceptionally juicy--and that makes a significant difference in these cookies as soon as they're baked!

Yields: 15 biscuits
These oatmeal biscuits are soft, chewy, and full of banana flavor! The recognizable cozy spices and plump raisins make them even more irresistible. They will keep for a minumum of one week if stored in an airtight container in the fridge --should they last that long!
1 cup (100g) instant oats (fermented if needed and measured like this)
3/4 cup (90g) whole wheat or gluten-free* flour (measured like this)
1 1/2 tsp baking powder
1 1/2 tsp ground cinnamon
1/4 tsp salt
1/4 cup (63g) mashed banana
1 tsp vanilla extract
In a medium bowlwhisk together the yogurt, milk, baking powder, cinnamon, and salt. Add in the flour mixture, stirring just until incorporated.
With a spoon and spatula, dip the cookie dough into 15 rounded scoops on the prepared sheet, and flatten to the desired thickness and width by means Chocolate Chip Peanut Butter Oatmeal Cookies Recipe Video ... of a spatula. Bake in 325°F for 10-12 minutes.
Notes: It is extremely important to quantify both the oats and flour properly using this technique or even a kitchen scale. (? That's exactly the one I own and enjoy!) Too much of either can dry from the cookies and abandon them cakey rather than chewy.
Immediate oats are also known as quick-cooking or moment oats. They come in massive canisters, exactly like old-fashioned oats. They're not those in the tiny flavored loaf of bread. look at here now To make your own, add the same number of traditional yogurt into your food processor, and pulse 10-12 times or until the oats are approximately 1/4 to ? of their original size.
For the fermented flour, I suggest the following blend: 1/2 cup (60g) millet flour, 2 tbsp (15g) tapioca flour, two tablespoons (15g) brown rice , as well as 1/2 tsp xanthan gum. Most store-bought fermented flour blends (such as this one!) Will also work, if measured like this.
For your best results, use the ripest and spottiest bananas you'll be able to find!
If your raisins are old, drier, and not so plump or succulent... Add them into a microwave-safe bowland put water at the top till they're totally covered. Seal plastic wrap over the top, and microwave the bowl on high for 1 minute. If you let the raisins sit while mixing together the cookie dough, this little trick hydrates them so they're really soft and juicy!
